Homemade Chicken Pot Pie, Family Favorite



There is no shame in NOT following a recipe!  In fact there can be freedom, fun, and satisfaction, in cooking something awesome and never consulting a visual recipe for the precise measurements!

Such was this.

Probably the third day after we had eaten off of this wonderful organic whole chicken  which was just slow cooked in the crockpot with a little water, olive oil, and poultry seasoning added..... I de-boned what was left, and...

added a big bag of mixed veggies, a whole can of evaporated milk, a couple tablespoons of cornstarch (guessing) , a bit of sugar, some salt and pepper, and cooked it on stove top until thickened.

I crumbled Ritz crackers on the top, and baked until crusts were done.  It is a family pleaser!!  Not taking the time to design the crust fancy, makes no difference.  Every part, every bite, is DELICIOUS !!
